All this working from home has made me a fat sow.  I have access to food too easily, and been eating at odd hours in the day. A decently stocked fridge and dry foods cabinet is such a luxury, or for the lack of better work, pure evil.  I can work with any ingredients I can find.  I’ve been trained by mommy that way. Mom cooks for her friend’s 2 boys every Sunday, so this Sunday, I held the fort cuz she wasn’t feeling too well.  From ransacking the fridge, I found some prawns, fish fillets and frozen oysters.  I wanted to use that can of opened tomato puree, so there goes, my signature Seafood Pasta.  Better still, there’s a piece of 200g steak from almost 2 months ago deep frozen in the freezer.  That made the mains.  Oh, the steak was for personal consumption not for the 2 boys…. Heheheeh….

Mom went out tonight for her opera class, leaving the 2 kids home alone without dinner.  Yay!  Can cook again.  Roasted eggplants and tomatoes pasta is it.  Found a recipe online, under 45mins, a decent meal with Campbell soup.  Hahahah… We LOVE eggplants, I like them microwave steamed, drizzled with some shoyu and sesame oil to taste.  Yums!

My bro liked it enough to go for a 2nd serving… Woohoo!!  

If I’m gonna do this again, I’ll cube the eggplants into bigger pieces to get more roasted flavour, and use Sherry vinegar instead of Red wine vinegar.  A need to stock up different types of vinegars… I want balsamic vinegar also… Good for salad dressings…
